I first made these for a family get together and they went down a storm. We all had to bring a plate of 'party food' and I thought this would be an excellent way to utilise some of our home produced lamb mince. These are now a firm favourite in the Bloor household and something a bit different. They work great on a BBQ, alongside your Edcombe Farm burgers! 😉
They are quick to make and super easy. I normally serve them with toasted pitta breads and humous but if I have a bit of extra time I make some homemade flatbreads - delicious!
Ingredients
500g Edcombe Farm lamb mince
1tsp ground cumin
2tsp ground coriander
2 large garlic cloves, crushed
1tbsp chopped mint
Oil for brushing - I use British rapeseed oil but olive oil would also work
1. Preheat your grill to a medium heat and line a grill pan with foil. (I double line to make clean up super easy!)
2. In a large bowl, mix all the ingredients together and divide into 8 balls.
3. In your hands, roll them into balls then, on an oiled surface, roll them into ‘sausage’ shapes and thread them onto metal skewers, brushing them with oil.
4. To cook, spread them evenly on the grill tray and place under the grill, turning them after the first 2 minutes. Monitor the koftas closely, continuing to turn them regularly until they have browned evenly.
5. To cook on a griddle: heat the pan until you can feel a good heat rising and cook for 3-4 mins each side. Don’t turn until they are well sealed or the meat will stick to the grill or pan.
6. Serve immediately.
